The first coffee from our tenth harvest with Catalan! And what an excellent way to mark the milestone. Catalan’s red and yellow Bourbons and honey processing set the stage for a rich coffee with prominent caramel sweetness.
Over the last ten years we’ve worked alongside Nicholas Hammond. Since that fateful cupping in 2012 during the Cup of Excellence, we’ve watched, with amazement, an upward trajectory of farm growth, mill innovation and coffee quality. Nico’s precision cherry sorting and processing established San Martin Jilotepeque as a premier destination for coffee production. But it goes beyond quality: Nico's mill runs 24/7 for local farmers to deliver and sell their cherries, making Catalan an invaluable economic hub for the community.
While many coffee varieties are grown here, red and yellow Bourbons are a significant part of the operation, and for good reason. This sweet and silky lot includes both Bourbons left with a good deal of mucilage on the seeds as they dried on raised beds. There’s a clear correlation to Nico’s honey processing and the rich and sweet fig notes found in the cup. It's a coffee that you just can’t tire of.
