Since 2013, we’ve watched the growth, innovation and constantly increasing quality from producer Nicholas Hammond and Catalan de Las Mercedes. His precision sorting and processing have helped put his town of San Martin Jilotepeque on the map for coffee production; and his wet mill, which also resides on the farmland, runs day-in-day-out with local farmers delivering their ripe cherries for Catalan to purchase.

While Nico grows other varietals such as Geisha and Pacamara in smaller quantities, hand-picked red and yellow Bourbons are what he’s celebrated for. This wonderfully sweet lot is a red honey process, meaning a good deal of mucilage was left on the seeds to dry on raised beds. Nico’s honey processing imparts date-sugar notes and a creamy mouthfeel that makes for an excellent espresso.

All the reasons we came to love Catalan de Las Mercedes are fully-realized in this coffee, and watching the steady progress just makes it that much sweeter.
