One of our most visible Direct Trade partners, Francisco Mena, kicks off the year with Los Pinos: a micro lot that is 100% Villa Sarchi and black honey processed at the Sumava farm and mill. Francisco is a savant when it comes to honey processing, and his black honeys in particular are packed with richness, complexity and sweetness. What makes Los Pinos slightly more adventurous is the varietal itself; Villa Sarchi is a natural mutation of Bourbon discovered in Costa Rica. It’s a smaller coffee plant that adapts well to high altitudes. A delicate, yet rich coffee that is perfect for these colder, winter months.
